The Christmas holiday is over, so are the huge amounts of food. Life is getting back to normal. That means my diet needs to go back to normal, too. It’s time for more salads and low-calorie meals. My partner and I love having a salad for dinner. They are tasty, fresh and can really make you feel full without the guilt of overeating.
If you embrace healthy food and veggies, then I have a suggestion you may like: Beetroot and avocado salad. You might have come across two similar salad recipes on the blog. Well, I can’t help it as I totally love both avocado and beetroot. Besides, this salad is so easy to prepare and makes the perfect dinner for anyone trying to keep their weight off.
Interested in super food? Avocado and beetroot are considered super foods and with good reason – they have plenty of benefits on our health. Beetroot is packed with vitamins, minerals, antioxidants and dietary fibre, or “a health-food titan” (read more about the health benefits of beetroot on the BBC Good Food website). Avocado is famous for the healthy fats it contains but it is also rich in potassium, fibre, vitamin K and a variety of other nutrients according to Authority Nutrition.
Now, my humble recipe…
- 3-4 cooked beetroots
- 1 ripe avocado
- 250 g baby plum tomatoes
- 1 carrot
- ¼ red onion
- Extra virgin olive oil
- the juice of ½ lemon
Cut the beetroots and avocado into cubes, halve the plum tomatoes, grate and slice the red onion. Put everything in a bowl, add the lemon juice, a drizzle of extra virgin olive oil and a few pinches of salt. So quick and easy! But then, healthy cooking is easy.
